Preheat oven to 375°F.
On a large baking sheet, mix cubed bread with 1/4 cup of olive oil. Bake for 10-12 minutes until lightly golden brown and transfer to a large mixing bowl.
In a large sauté pan, add rest of olive oil and cook garlic over medium heat for 1-2 minutes until soft.
Add sausage to the pan and cook until browned. Remove from heat and pour on top of the toasted bread.
In the same sauté pan, add a touch more oil and cook diced apples, diced onions, rosemary, sage, thyme, salt, and pepper over medium heat until soft and translucent.
Add dried cranberries and cook for another 2 minutes. Remove from pan and add to bread mixture.
Deglaze sauté pan with chicken stock and heat for 5 minutes. Pour stock over the bread mixture and work all of the ingredients together with a spatula.
Transfer mix to a greased 9 x 13" glass baking dish.
Cook for 30-40 minutes until the bread begins to turn golden. Cover with tin foil and bake for an additional 15-20 minutes.
Uncover and broil for a couple minutes to crisp the bread on top.
